HCG Diet Phase 2 - Day 2

Hooray! Today I woke up and I had lost 3 lbs! I am super excited, because I didn't think it would be that much. Of course, I had gained two during phase one, so I'm really only down a pound but still!

So I was a little hungry all day, though I was quite full after my dinner. After about an hour though I was a bit hungry again. I don't know what it is, because even though I feel a little tinge of hunger I'm not so hungry that I just HAVE to eat something. Every time I feel like I want to eat something I drink some water, which really helps. I'm really beginning to think though, that my eating has become a habit. I've really noticed that I had been snacking A LOT. I would take a handful of something while I was making the kids their breakfast, or lunch, or dinner. I would take a nibble every time I cut up something or prepared something. I mean who doesn't really? Still, I think that has been the hardest thing for me during the days. Especially when I am feeding the kids. I guess I will have to train myself not to eat a little of everything I see. I'm sure all those little nibbles here and there add up, and turn into nasty bits of fat on my body!

Lunch and Dinner today, were DELICIOUS! Here's what I had;

Breakfast I had Green tea and my baggie of strawberries(couldn't even be bothered to put them on a plate, hehe).
 For Lunch I had my previously prepared beef with a little beef stock, liquid aminos and a serving of asparagus. This was so good. I'm seriously going to make this every day. I just love it.
 For dinner I was going to make butter chicken, but as I let it simmer, it simmered away into nothing. I cheated and added a stick of celery(I know I know, but it's one stock and it's like what 5 calories?). I also added some chicken stock to turn it into soup. I would absolutely make this again. I ate it with both of my melba toast. I was thinking though, since tomatoes are actually a fruit, you could probably just make this and add a whole serving of vegetable and it would be a perfect meal. I plan on trying this out.
 Here's the recipe for my Butter chicken Soup

250g fresh tomatoes diced
100g chicken breast, cooked and cubed
1 stalk of celery(which you can omit)
a dash of cinnamon
1/4 tsp turmeric
1 clove minced garlic
small amount of chopped onion
1-2 cups of chicken broth
A little stevia if needed

I cooked the chicken then added all of the ingredients to the pan and simmered with a lid on for about an hour. Then I added the chicken broth and simmered a bit more. I enjoyed this a lot.

For dessert I made the same recipe of my "Apple Crisp" that I made myself last night, but tonight I made a four serving batch so that we could eat this as a family. I only took 1/4 of it. My kids gobbled this up pretty fast. I think I've found a new healthy dessert recipe for this house!
